Grain Free Low Carb Chicken Piccata Preparaon me: 20 minutes Servings: 4 A Low Carb Version of Chicken Picaa, using almond flour and pecorino romano cheese. 1 lb. boneless chicken breasts (2 breasts) ½ tsp. salt ½ tsp. pepper 1 to 2 eggs, beaten ¾ cup almond flour ¼ cup freshly grated Pecorino Romano or Parmesan Cheese ¼ cup cooking oil (avocado or olive oil) ½ cup white wine (or chicken broth) 2 tbsp. lemon juice 2 tbsp. capers 2 tbsp. unsalted buer 2 tbsp. chopped parsley for garnish Buerfly the chicken breasts, by slicing them horizontally. Place each breast between plasc wrap and gently pound flat. Season with salt and pepper. Cut the chicken into serving sized pieces. Dip chicken pieces into the beaten egg. Mix the almond flour and grated cheese together and dip chicken pieces into the mixture. Heat oil in pan to medium heat. Place chicken pieces in the pan (not crowding) and reduce heat to medium low. Each side only takes a few minutes to cook. Use an instant-read meat thermometer. Chicken must reach 165°F (74°C) to be fully cooked. You may need to fry in batches. Drain chicken pieces and place on paper towels. Place chicken on an oven-safe dish in a warm oven while making the sauce. Save the oil to use in the sauce. Lemon Sauce Heat oil, wine or broth, lemon juice, and capers on medium heat, unl the liquid is reduced by half. Add buer and sr unl incorpo- rated. Pour the sauce over the chicken and serve immediately. Green Beans Almondine Prep me: 10 minutes, Cook Time: 20 minutes Servings: 4 1 lb. green beans ¼ cup sliced almonds 2 tbsp. almond buer 1 tsp. buer Sea salt Pepper Trim the ends off the green beans. Place the beans in cold water, allowing water to come 2 inches above them. Bring the beans to a boil and cook about 10 minutes or unl just tender. You may have to taste.
